From the main operator HMI screen

Tap the button on the bottom right of the screen to get to the main page

On the bottom left hand of the main screen, tap the machine/toolbox button.

On this new screen, tap the button with two gears below a gear on a threaded shaft

You are now on to encoders page.

The min/max values are in hexadecimal.  You will have to turn the encoder to get its reported hexadecimal value between the min/max values listed on the encoder page in order to get the default user page to show the correct values.
